A behind-the-scenes close up of the irrigation and guttering that goes behind and underneath the terracotta pots. The water drips into the pots and around the wax-cloth bags. The evaporation of the water from inside to the outside of the terracotta, cools the contents of the pots. This allows you to store things in a cooler environment without the need for refrigeration.
